Assyria was an ancient empire that controlled the entire Middle East during the period before the Babylonians (circa 1000 – 600 BC). Pimp. My family is from the lake Urmia region of northern Iran near the Turkish-Armenian border. As a Christian group within a Muslim region, the Assyrians maintained a separation and autonomy from their neighbors, resulting in the preservation of their unique culinary traditions. While similar to surrounding Middle Eastern and Greek cuisines, Assyrian food uses fewer spices and more herbs, resulting in a lighter, fresher meal. This page features tried and true recipes from our 4,000 years of experience in the kitchen. Like all our family friends who now request Assyrian food for every holiday, birthday, and their last meal before death, I hope you enjoy our culinary heritage!
